Add tags to a single document: Open the document -> “More” -> Add tags-> choose existing tags or create a new tag

Add tags to multiple documents: Open CamScanner app -> tap the select icon -> select documents -> "More"->“Add Tags” -> choose existing tags or create a new tag.
